District of Columbia Public Schools
School Nutrition Management was completed within the District of Columbia Public Schools. Over 45,000 students attend 121 schools throughout the District of Columbia. The health and achievements of these students is supported by the use of fresh, local ingredients to make nutritious and appetizing meals.
The schools make it easy to help students choose healthy meals. Over 27 schools have salad bars, and every school offers a vegetarian option daily. In addition, at least 20% of the food products used in school meals must be grown in the Mid-Atlantic Region.
The school nutrition management rotation provided the skills needed to manage in a regulated foodservice environment. Examples of projects and experiences can be seen to the left, but included analyzing food and labor costs, evaluation of new products and strategies on how to bring them to the market, and the training and education of staff, students, parents and faculty.
